Mmmmmmm tomatoey goodness
As you may have seen from the previous post we had a little harvest and I’ve managed to use everything so far in meals during the week. Except the snow peas that we just crunched on about 15 seconds after the photo was taken. They were bloody nice too I might add, so full of crisp flavour. It makes it all worth it.
The cherry tomatoes were put to good use in a couple of dishes, firstly I sliced a hand-full up and sprinkled them over a home-made pizza. Then I used whole cherry tomatoes in a pasta sauce that I cooked up the other night and I’m happy to say they held up in the fridge for a week with no problems at all. Mind you I almost doubled the harvest this week so it was a mixture of fresh and old.
They added little flavoursome bursts to the pasta sauce (that I’ll share with you here now):
Ingredients:
- Â Three or four medium mushrooms
- An onion
- Handful of fresh basil (mmmmm maybe you should grow your own!)
- Some olives
- Three cloves of garlic (I like garlic a lot)
- Some fresh oregano (hey I have that growing on the back deck!)
- A handful of cherry tomatoes (but of course)
- Maybe some diced capsicum
- Tomato paste (I dunno maybe two teaspoons - it’s to thicken it up a little)
- Can of crushed tomatoes or indeed actual crushed tomatoes!
Now I’m a little play it by ear when it comes to chef duties and my recipes change frequently and I rarely follow them to the letter so this is only a guide. Grab yourself some olive oil too, drop in a deep fry pan and begin to sauté the onion and garlic. Don’t leave it too long and throwing in everything but the tomato paste and crushed tomatoes. With the cherry tomatoes you can burst them if you want but I prefer to leave them whole and fry them up. Once everything is getting nicely sautéed drop your crushed tomatoes in and burn off some of the liquid. Finally mix in your tomato paste to thicken it up and then drop it over some freshly cooked pasta and sprinkle shaved parmesan.
Easy.

Those cherry tomatoes are absolutely beautiful! I’m not much of a vegetable eater, but looking at beautiful images of homegrown vegetables makes me think I need to expand my culinary horizons.

Hi Jen, I found that any veggies that I wasn’t that keen on I was always more likely to give them a go if I had a hand in growing them. Probably a good lesson for parents I think!
Remember you can always just choose to grow the one plant of something in a pot no matter where you are!! Oh and thanks for dropping by
